胰岛素是一种由胰岛β细胞和一些硬骨鱼布氏体分泌产生的肽类激素。它通过促进脂肪、肝脏和骨骼肌细胞吸收血液中的葡萄糖，从而对糖类、脂肪和蛋白质代谢起重要作用。这些组织吸收的葡萄糖转化为糖原或者脂肪(甘油三酯)，而肝脏是个例外，其吸收的葡萄糖可以转化为糖原和脂肪。肝脏中的葡萄糖产量受血液中高浓度胰岛素强烈抑制。血液中胰岛素浓度高时，它就是一种同化激素，可促进血液中的小分子转化为细胞内的大分子。血液中胰岛素浓度低时，它通过促进广泛的分解代谢而产生相反的效果。当胰岛β细胞被自身免疫过程破坏，胰岛素就不再合成或者分泌到血液中，进而导致 1 型糖尿病。遗传易感性和环境因素的综合影响会导致胰岛素抵抗，这就是 2 型糖尿病。另外，胰岛β细胞产生过量的胰岛素或反应性低血糖都与胰岛素瘤有关。
